Job summary

Jora Malaysia is seeking a Lead Baker to oversee daily production operations in our bakery. You will plan and manage daily schedules, prepare and bake breads, pastries, cakes, and other bakery products according to company recipes and standards.

You will ensure product quality, monitor the full baking process, train Bakers and Assistants, manage ingredient usage and stock, conduct quality checks, maintain equipment, and uphold food safety and workplace safety standards.

Qualifications

• Minimum 2-3 years of experience as a Baker, Senior Baker, or Head Baker.

Responsibilities

• Lead and supervise the bakery team in daily production operations.
• Plan and manage daily production schedules according to sales requirements.
• Prepare and bake breads, pastries, cakes, and other bakery products according to company recipes and standards.
• Ensure consistency in product quality, taste, texture, appearance, and freshness.
• Monitor the complete baking process including dough preparation, mixing, shaping, proofing, baking, cooling, and finishing.
• Train, guide, and monitor Bakers, Senior Bakers, and Bakery Assistants.
• Ensure proper portioning, recipe compliance, and efficient ingredient usage.
• Monitor stock levels of baking ingredients and coordinate replenishment when required.
• Conduct regular quality checks on raw materials and finished products.
• Ensure all bakery equipment, tools, and workstations are properly maintained and cleaned.
• Maintain strict food safety, hygiene, and workplace safety standards.
• Identify production issues and take corrective action promptly.
• Support new product development, seasonal products, and product improvement initiatives.
• Maintain accurate production records and communicate operational issues to management.
• Ensure the bakery operates efficiently while minimizing wastage and production costs.
• Perform other duties as assigned by management.
