Job summary

Mandarin Empire Sdn Bhd in Malaysia is seeking a skilled kitchen professional to prepare and cook Chinese dishes to our standard recipes, maintain quality, and help manage costs. You will supervise kitchen staff and ensure safety, hygiene and portion control while working under pressure.

The role involves menu planning support, stock management and collaboration with suppliers, with weekend and public holiday shifts as required.

Qualifications

• Relevant experience in Chinese cuisine.
• Good knowledge of Chinese cooking techniques and ingredients.
• Experience in food costing, stock control and kitchen operations is an advantage.
• Responsible, disciplined and able to work independently.
• Good communication and teamwork skills.
• Able to work under pressure, weekends and public holidays when required.

Responsibilities

• Prepare and cook Chinese dishes according to standard recipes and quality requirements.
• Ensure food quality, taste, presentation, portion control and timely service.
• Assist in menu planning, recipe costing and food cost control.
• Manage stock, conduct stock take and coordinate ingredient orders with suppliers.
• Coordinate kitchen staff and ensure duties are properly assigned and completed.
• Maintain proper food hygiene, safety, cleanliness and storage standards.
• Minimize food wastage and maintain proper portion control.
• Ensure kitchen equipment is used safely and maintained properly.
