This is a mixology position at a luxury hospitality venue, responsible for designing and executing a sophisticated, high-margin cocktail program. You will reporting to Director of F&B, ADFB, Beverage Manager & Head Sommelier, working together with Executive Chef to develop advanced food-and-beverage pairings using specialized culinary equipment, curate premium spirits and botanicals, and deliver immersive, personalized service to affluent guests and VIP hotel clientele. The role combines creative menu innovation with operational excellence, cost control, and compliance management.
Design and execute a shifting, high-margin cocktail menu integrating seasonal produce, custom ferments, house-made bitters, tinctures, and clarified components
Partner directly with the Executive Chef to develop advanced food-and-beverage pairings, utilizing kitchen gear (sous-vide, rotovaps, dehydrators, centrifuges) to optimize liquid textures and aromatics
Source and maintain a collection of vintage spirits, rare mezcals, boutique sakes, and organic botanicals
Develop a comprehensive, premium low-and-no-ABV (alcohol by volume) menu matching the sophistication of the primary spirit program
Deliver charismatic, interactive bar service, educating affluent global travelers on drink histories, custom ice programs, and regional botanical profiles
Execute elegant tableside cocktail presentations (e.g., barrel-aged rollings, smoked glass infusions) for high-net-worth individuals and VIP hotel guests
Memorize regular guest profiles and decipher subtle flavor preferences to build custom, off-menu drinks on demand
Implement recipe mapping, exact pour counts, and precise batch specs to maintain the designated beverage cost percentage without compromising luxury quality
Track high-value inventory sheets and minimize wastage patterns
Enforce absolute cleanliness, pristine station organization, and top-tier bar setup matching international HACCP standards
Experience as bartender or mixologist is preferable
Diploma in Hospitality Management, Culinary Arts, or equivalent international experience
Mixology certifications, Certified Sommelier (CMS/WSET Level 2+), or Bartender accreditations are highly advantageous
Valid local Food Handler Certification and Responsible Service of Alcohol (RSA) licensing
Complete mastery over ice carving, carbonation methods, clarification (milk washing, agar-agar), fat-washing, and rapid infusion science
Safe operation of smoking guns, vacuum sealers, sous-vide baths, and professional refractometers (to measure sugar content/Brix)
Deep understanding of correct crystal selections, temperature tempering, and bespoke garnish staging
Impeccable verbal skills in English; secondary high-value languages (e.g., Mandarin, French, Japanese) are highly preferred
Ability to remain calm, graceful, and highly organized during high-volume, elite-tier event rushes
Impeccable personal presentation aligned with ultra-luxury 5-star brand requirements
