We are looking for a dynamic Restaurant Manager to join our pre-opening team.
The role will report to the Director of Food & Beverage.
Conveniently located adjacent to Rome Termini Station and a short distance from the Colosseum, the 238-room Hyatt Regency Rome Central is a contemporary 5-star hotel offering premium business services and one of Italy’s most dazzling leisure rooftop experiences.
The hotel is also featuring a SPA, 5 food & beverages outlets and more than 1000 sqm events venues.
Main duties and responsibilities
- Lead and supervise daily restaurant and Room Service operations.
- Be visibly present on the floor during peak hours, supporting the team with a hands-on and proactive approach.
- Conduct pre- and post-service briefings, ensuring team alignment.
- Ensure opening and closing procedures are completed to standard.
- Implement and uphold hotel SOPs, P&Ps, HACCP, and safety regulations.
- Conduct regular walkthroughs of Restaurant, Bar, and BOH; rectify or delegate any service, cleanliness or maintenance issues.
- Monitor spoilage, enforce FIFO and color-coded systems, and control waste.
- Maintain proper storage, sanitation, and cleanliness standards at all times, in compliance with hotel and local regulations.
- Review equipment cleaning schedules and coordinate activities with stewarding.
- Supervise and schedule team members, ensuring proper coverage based on business needs.
- Conduct weekly and monthly trainings; document attendance and performance.
- Coach team members on SOPs, upselling, service delivery and guest interaction.
- Interview and hire staff in accordance with hotel policy.
- Collaborate with Bar Manager for roster planning and team synergy.
- Uphold brand standards and service delivery at all times.
- Handle guest complaints and feedback promptly, effectively and with empathy.
- Promote positive guest relations; ensure VIPs and special requests are well managed.
- Follow up on guest preferences and recurring feedback, updating relevant departments.
Skills and requirements:
- Minimum 2 years in a supervisory role within a luxury or upscale hotel environment.
- Fluent in Italian and English, both written and spoken.
- Strong knowledge of F&B trends, wine and beverage service, allergen awareness.
- Ability to work independently and prioritize tasks in a fast-paced setting.
- Experienced with Simphony POS.
- Strong organizational, leadership and communication skills.
- Able to work a flexible schedule including weekends and holidays.
- Physically able to stand long hours and lift up to 25 kg.
