A forward-thinking company is seeking a passionate Menu Development Leader to innovate and enhance their food offerings. In this exciting role, you will drive menu changes, ensuring they align with the company’s artistic vision while maintaining the highest standards of quality and presentation. You will collaborate with the Executive Chef and the Group F&B team to analyze performance metrics, ensuring that every dish reflects authenticity and meets client expectations. If you have a strong background in hospitality management and a keen sense of food trends, this opportunity will allow you to make a significant impact in a dynamic environment.
What You’ll Do:
Innovate and Lead Menu Changes: Drive the food menu change process, from drafting structures and conducting food tests to selecting crockery and controlling costs. Ensure each menu change aligns with Big Mamma’s artistic direction and is rolled out with precision and on schedule.
Uphold Excellence in Food and Presentation: Be the ambassador of our artistic vision, ensuring that every dish and table setting reflects the authenticity and quality that companyis known for. Monitor and analyse the menu’s performance, making data-driven adjustments to meet our objectives.
Coordinate Special Projects: Lead exciting new projects such as new restaurant openings and special festive menus, working closely with the Executive Chef and the Group F&B team.
Ensure Data Integrity: Maintain the quality of data across all tools used for menu development, including internal databases and point-of-sale systems.
Stay Ahead of Food Trends: Keep abreast of both UK and international food trends to continually evolve our menu offerings while staying true to our Italian roots. Conduct price benchmarking and inspiration research to keep our offerings competitive and exciting.
Analyse Performance: Work with the Group F&B team to analyse the food offering performance. Use metrics such as spend per head and margin contribution to inform future menu changes and recommend adjustments as necessary.
Guarantee Quality: Ensure that our dishes meet the highest standards in taste, presentation, and execution. Monitor weekly performance reports and client feedback, implementing action plans to maintain excellence in our client food experience.
What We’re Looking For:
A Bachelor’s or Master’s degree in Business, Hospitality Management, or a related field.
A genuine passion for food and experience in menu engineering.
Exceptional organisational and communication skills.
Strong analytical thinking and performance analysis experience.
Understanding of professional food production.
A keen sense of aesthetics in F&B and the ability to communicate our artistic vision.
Fluent in English. Italian and/or French knowledge is a plus.
