We are looking for a talented Head Bartender to join our pre-opening team.

The role will report to the Bar Manager.

Conveniently located adjacent to Rome Termini Station and a short distance from the Colosseum, the 238-room Hyatt Regency Rome Central is a contemporary 5-star hotel offering premium business services and one of Italy’s most dazzling leisure rooftop experiences.

The hotel is also featuring a SPA, 5 food & beverages outlets and more than 1000 sqm events venues.

Main duties and responsibilities

  • Co-develop a signature cocktail list and seasonal menus aligned with the concept and brand identity;
  • Lead the daily briefing with energy and purpose;
  • Coach and mentor the bar team, fostering a culture of learning, creativity and excellence;
  • Organize and deliver internal training on products, techniques, service standards, and storytelling;
  • Actively support and engage in service across all bars and outlets;
  • Maintain a strong floor presence, ensuring personalized service and guest satisfaction;
  • Manage guest complaints with empathy and prompt solutions;
  • Ensure proper mise-en-place and adherence to recipes, portioning, and presentation;
  • Guarantee the correct use of POS systems, opening/closing procedures, and cash handling;
  • Control stock levels and coordinate with the Bar Manager for weekly orders and monthly inventories;
  • Monitor waste, variances, and product rotation to optimize costs and quality;
  • Uphold hygiene, safety, and maintenance standards in compliance with HACCP guidelines;
  • Take charge of operations in the absence of the Bar Manager.

Skills and requirements:

  • Minimum 2 years experience in a similar role within upscale /lifestyle hotels
  • Proven knowledge of mixology, spirits, and global beverage trends
  • Strong leadership skills with the ability to train, inspire, and manage a team
  • Hands-on approach and passion for delivering high-quality service
  • Excellent communication in both Italian and English
  • Knowledge of POS systems, basic cost control, and inventory procedures
  • Flexibility to work shifts, weekends, and holidays as needed
  • Attention to detail, problem-solving skills, and a guest-centric attitude
