Overview

We are looking for a Food & Beverage Manager for the Renaissance Tuscany Il Ciocco Resort & Spa.

The hotel is part of Renaissance Hotels, lifestyle brand of Marriott International group, a collection of high livels hotels comprising 173 uniques properties located in 39 countries, including historical icons and modern masterpieces, reserved for passionate travelers in looking for authentic local experiences.

Thanks to its location in a fascinating area of the Tuscany that boasts breathtaking views and a cultural and gastronomic heritage, Renaissance Tuscany Il Ciocco Resort & Spa has distinguished itself by becoming the first Renaissance Hotel in the region and first Renaissance Resort in Europe.

Responsibilities
  • To ensure the smooth and effective running of the day-to-day F&B operations in accordance with all Marriott core standards - proactively driving strategies to effect product enhancements and operating efficiencies
  • Adjust operations according to business mix, without loss of quality or established standards highest levels of employee and guest satisfaction.
  • Analyse daily and monthly results and implement strategies to improve Average Checks, Covers and profitability
  • In conjunction with F&B Cost Controller, analyse daily and monthly food and beverage cost control reports and take action to improve cost percentages
  • Manage Yield Management of inventories in accordance with Budget guidelines
  • Communicate and administer selling strategy for Food & Beverage business to all internal & external parties
  • Generate new ideas for service and products that will maintain a competitive and leading edge over our Competitive set
  • Be proactive in prospecting / creating new business in all areas of Food & Beverage
  • Maintain effective and appropriate liaison with clients whilst on property for site inspections and / or Events
  • Conduct quarterly appraisals with direct reports, providing guidance towards personal competency & technical training & development opportunities
  • In conjunction with HR Manager, develop and implement Training programme for F&B Department heads
  • Attend communication meetings as appropriate eg daily F&B Briefings, daily Operations Meeting, F&B Communications Meeting
  • Establish profit goals and effective menu planning and pricing
  • Ensure effective compliance with all health, safety and hygiene legislation
Qualifications
  • Significant management experience in similar operation for minimum 2-3 years OR Assistant in a larger operation for a minimum of 2 years
  • Senior Operational management experience of a team in Front Office, and / or Food & Beverage Outlet
  • Must demonstrate assertiveness to instruct, firmly represent organisational standards and goals, or discipline as necessary.
  • Must demonstrate an ability to develop a strong working relationship with others by being fair, open, reliable and consistent.
  • Must demonstrate an ability to work with employees to develop strategies for enhancing performance and to recognise contributions in a timely manner.
  • Must demonstrate an ability to dialogue informally and effectively with all co-workers, in one-on-one or small group settings, through clear articulation of ideas and active listening.
  • Must demonstrate an ability to set priorities, develop managerial work strategies ( using delegation, holding meetings, setting work plans etc.) schedule work, co-ordinate resources and establish feedback
  • Must demonstrate an ability to maintain a high activity level towards goals - the ability to originate action (self-starting)
  • Must demonstrate a passion for working in the Hospitality Industry, and demonstrates a willingness to anticipate and recover in response to guest needs.
  • Must demonstrate a knowledge of the need to maintain Marriott standard and quality services while adhering to financial / budgetary provisions
  • Outstanding personal presentation standards
