Description of the research activity:
The technologist will develop protocols for the extraction and characterization of bioactives from fruit by-products, analyzing them with chromatographic (HPLC-MS), spectroscopic (UV-Vis, FTIR, DSC) and electrochemical techniques. He/she will evaluate stability and antioxidant activity (DPPH, ORAC, FRAP) and test sustainable processing techniques. The student will collaborate with partners to develop functional ingredients and bio-based materials. The work will be carried out at unibz, with possible trips for testing and dissemination.
