The Position
FOOD & BEVERAGE MANAGER
Main Purpose

The F&B Manager oversees all aspects of the division, including Restaurants, Bars, In-Room Dining, and Banqueting, ensuring exceptional service in line with Rocco Forte standards.

Reports to: General Manager

Main Duties & Responsibilities
  • Manage the entire F&B division according to company policies and maintain its reputation.
  • Lead by example with a hands-on approach, developing motivated and ethical team members to deliver cost-effective, quality service.
  • Develop and monitor budgets for each revenue outlet, taking corrective actions as needed to meet sales and cost targets.
  • Create budgets for F&B equipment and recommend renovations.
  • Prepare monthly forecasts.
  • Ensure accurate cash procedures, documentation, guest check analysis, ticket controls, and daily sales reporting.
  • Plan staffing needs and recruit, train, and evaluate team members.
  • Implement effective orientation, training, and professional development programs.
  • Monitor labor costs and minimize overtime.
  • Follow standard operating procedures for revenue and cost control, and adhere to company policies and standards, including health and safety regulations.
  • Research new products, evaluate costs, and collaborate with Purchasing.
  • Oversee guest service and handle complaints to ensure guest satisfaction.
