Rosewood Rome is currently casting for a Director of Bars, responsible for the strategic leadership, operational excellence, and financial performance of all bars and beverage operations across the property, under the guidance of the hotel Director of Food & Beverage. This includes overseeing bar concepts, mixology programs, wine and spirits selection, vendor selection, staff training, guest experience, and compliance with health and safety regulations. The role requires a visionary leader with a passion for innovation, entrepreneurship, exceptional service, and a deep understanding of global and local beverage trends.

Key Responsibilities:

• Strategic Leadership:
• Develop and implement a comprehensive beverage strategy aligned with Rosewood identity and guest expectations;
• Lead the creation and evolution of bar concepts and beverage menus;
• Monitor industry and local trends in Rome to introduce innovative offerings to maintain a competitive edge.
• Operational Management:
• Oversee daily operations of all bars, lounges, and beverage outlets of Rosewood Rome;
• Ensure consistent delivery of high-quality service and product standards;
• Collaborate with culinary and events teams to create cohesive food and beverage pairings.
• Financial Oversight:
• Manage beverage budgets, beverage cost controls, pricing strategies, and lead the stocks count;
• Analyze sales data and implement initiatives to drive revenue and profitability;
• Negotiate with suppliers and manage vendor relationships to optimize purchasing, working together with the Purchasing Manager.
• Team Development:
• Recruit, train, and mentor bar managers and beverage associates;
• Foster a culture of excellence, creativity, entrepreneurship, and continuous improvement;
• Conduct regular performance reviews and provide coaching and development plans.
• Guest Experience:
• Ensure exceptional guest satisfaction through personalized service and memorable experiences;
• Handle guest feedback and resolve issues promptly and professionally.
• Compliance & Safety:
• Ensure adherence to all local, state, and federal laws regarding alcohol service and HACCP regulations;
• Maintain high standards of cleanliness, hygiene, and safety in all beverage areas.
  

Qualifications:

• Bachelor’s degree in Hospitality Management, Business, or related field (preferred);
  
• Minimum 7–10 years of progressive experience in bar and beverage management, with at least 3 years in a senior leadership role;
  
• Strong knowledge of mixology, wine, spirits, and beverage trends, preferably in Rome too;
  
• Proven track record in financial management and team leadership;
  
• Excellent communication, organizational, and interpersonal skills;
  
• Certification in responsible alcohol service is a plus.
