We are looking for a motivated Bar Manager to join our pre-opening team.

The role will report to the Director of Food & Beverage.

Conveniently located adjacent to Rome Termini Station and a short distance from the Colosseum, the 238-room Hyatt Regency Rome Central is a contemporary 5-star hotel offering premium business services and one of Italy’s most dazzling leisure rooftop experiences.

The hotel is also featuring a SPA, 5 food & beverages outlets and more than 1000 sqm events venues.

Main duties and responsibilities

  • Supervise and coordinate daily operations across all bar outlets.
  • Ensure a visible presence on the floor during peak times, supporting and guiding the team.
  • Enforce consistent application of SOPs and P&Ps in drink preparation, service delivery and cleanliness.
  • Design and update beverage menus for all bars, aligned with brand identity, seasonality and guest preference.
  • Create and maintain recipe cards with precise specifications and cost analysis.
  • Support beverage menu development in Restaurant, IRD, Banquets and Events.
  • Stay up to date with market trends and innovations and translate into practical offerings.
  • Collaborate with Executive Chef and Restaurant Manager on pairing concepts and food synergy.
  • Lead menu engineering initiatives, price calculation and margin optimization.
  • Champion service excellence and personalized guest interactions.
  • Handle guest feedback with care, providing immediate recovery and follow-up when required.
  • Promote an engaging, welcoming bar atmosphere in all outlets.
  • Hire, train and coach bar team members in service standards, mixology techniques and brand philosophy and conduct regular skills assessments and performance evaluations.
  • Organize weekly/monthly training sessions, including wine & spirit tastings, cocktail workshops, and guest experience modules.
  • Motivate the team through clear communication, role modeling and consistent feedback.
  • Enforce health, safety, hygiene and sanitation standards in all beverage operations.
  • Conduct monthly beverage inventories in coordination with the Restaurant Manager.

Skills and requirements:

  • Minimum 2 years of experience in a similar role within an upscale or luxury hotel.
  • Fluent in Italian and English (spoken and written).
  • Strong background in mixology and beverage operations.
  • Excellent leadership and team-building skills.
  • Knowledge of cost control, beverage engineering, market trends and premium brands.
  • Proficiency with Simphony POS.
  • Available to work flexible shifts, weekends and holidays.
  • Physically able to stand for extended hours and lift up to 25kg.
