Job Responsibilities
  1. Ensure the smooth and efficient operation of the Bakery Shop and daily production according to company policies.
  2. Be responsible for the production, quality, and presentation of the bread assortment used in daily menus.
  3. Assist the Head Baker in preparing production forecasts and recording leftovers to minimize waste and control food costs.
  4. Help set up the bread display in various buffets.
  5. Maintain complete knowledge of U.S. Public Health rules and regulations, ensuring daily compliance.
  6. Oversee the cleaning of the bakery shop as scheduled by the Executive Chef, using proper methods to prevent equipment damage.
  7. Prepare the bakery for any announced or unannounced USPH inspections by ship management or USPH inspectors.
  8. Manage requisition and transportation of items from main stores to the bakery when assigned.
  9. Ensure recipes and yields meet company standards.
  10. Assist the CDP Baker with completing the daily consumption recap as required by the Executive Chef.
  11. Acquire and apply knowledge of ship’s standard operations to assist guests and crew with inquiries.
  12. Attend meetings, training, courses, and other work-related activities as required.
  13. Perform related duties as assigned, understanding that these are not the only responsibilities of the role.
Qualifications
  • At least three years of experience as a Baker in an upscale hotel, resort, cruise ship, or banquet service, with shipboard experience preferred.
  • Knowledge of proper cleaning techniques, equipment requirements, and usage.
  • High school diploma or equivalent education required.
