Manifest Hospitality is seeking a Restaurant Manager for Sorano Mumbai to lead the floor across lunch, dinner, aperitivo and late evenings. You will be visibly on the floor, engaging guests, developing a strong FOH team and ensuring exceptional hospitality that drives guest loyalty.
You will balance guest satisfaction with commercial performance, manage reservations and seating, and collaborate with kitchen and bar to deliver seamless Sorano experiences.
We’re looking for a Restaurant Manager to lead the floor at Sorano Mumbai.
This is a role for someone who genuinely loves restaurants — the rush of a full dining room, knowing your regulars, developing a great team, solving problems before guests notice them, and creating the kind of hospitality that makes people want to return.
Sorano Mumbai will move through different energies across the day — from lunch and dinner to aperitivo, drinks and a more energetic late evening.
We need someone who can run the room brilliantly through all of them.
You will take ownership of the restaurant experience every day.
We don't want a manager who watches the restaurant from a desk.
We want someone who runs the room.
Build a front-of-house team that is confident, warm, knowledgeable and fast.
A Restaurant Manager should understand the business behind the hospitality.
You will work towards:
You should be comfortable looking at yesterday's numbers and asking:
What happened, why did it happen, and what do we do differently today?
Own the flow of the restaurant.
Work closely with the Chef and Bar team to ensure the entire Sorano experience comes together.
Sorano Mumbai won't behave exactly the same way throughout the day.
As the evening develops, the restaurant may become more energetic — with a stronger bar, music and social atmosphere.
You should understand how to manage that transition while protecting what Sorano fundamentally is:
a great restaurant first.
Work closely with our Community & Experiences and Bar teams to execute programming and busy nights while ensuring service remains excellent.

We should also be able to walk into Sorano on a packed Saturday night and feel that someone is completely in command of the room.
Ideally, you've managed or been a strong Assistant Restaurant Manager in a high-quality, high-volume restaurant, premium bar or contemporary hospitality concept.
You should be:
Experience in a luxury hotel is welcome.
But we're not specifically looking for a hotel-style manager.
We'd equally love to meet someone who has grown through some of India's best independent restaurants and bars and understands contemporary hospitality.
