Job summary

SAJ Food Products (P) Ltd - Bisk Farm, Kolkata-based leader in bakery goods, is seeking a Manager – R&D (Product Innovation & NPD) to drive new biscuit concepts from ideation to launch.

The role requires 8–10 years in R&D/product development for biscuits/bakery, strong formulation and cross-functional collaboration, and readiness to leverage PLM tools and AI in innovation.

You will coordinate with Manufacturing, QA and Engineering to industrialize products.

Qualifications

• - Drive new product development from ideation to launch, including bench trials, pilot runs, and production scale-up.
• - Explore and experiment with novel ingredients, textures, and formats to create unique biscuit offerings.
• - Develop and fine-tune recipes considering taste, texture, cost, nutrition, and shelf-life.
• - Balance functional ingredient performance with regulatory and nutritional considerations.
• - Conduct sensory evaluations and consumer validations to refine products.
• - Coordinate closely with Manufacturing, QA, and Engineering teams for trial planning and successful product industrialization.
• - Support factory trials, troubleshoot formulation or process issues, and ensure consistency across batches.
• - Collaborate with Marketing, Packaging, Supply Chain, and Procurement to ensure 360° readiness for launch.
• - Work with ingredient vendors and co-development partners to explore innovations and technology upgrades.
• - Maintain robust documentation for formulations, trials and specifications.
• - Ensure product compliance with FSSAI and other applicable food safety and labelling regulations.

Job Title Manager – R&D (Product Innovation & NPD)

Reports To: Head – R&D

Key Responsibilities:

• Drive new product development from ideation to launch, including bench trials, pilot runs, and production scale-up.
• Explore and experiment with novel ingredients, textures, and formats to create unique biscuit offerings.

• Maintain robust documentation for formulations, trials and specifications.
• Ensure product compliance with FSSAI and other applicable food safety and labelling regulations.

REQUIREMENT

Education:

• B.Tech / M.Tech / M.Sc in Food Technology, Food Science.

Experience:

• 8 to 10 years of experience in R&D/Product Development in the biscuits, bakery.
• Hands-on experience in developing and launching new products at scale.

Technical Skills:

• Strong command over biscuit formulations, ingredient functionality, and processing behaviour.
• Has prior experience on PLM tools and Specification designs.
• Is tech-savvy and ready to imbibe and implement AI tools.
• Working knowledge of food safety, regulatory standards, and nutrition labelling.
• Familiarity with clean label, fortified, or functional product development is a plus.
