JOB DESCRIPTION - PRODUCTION HEAD
POSITION SUMMARY
The Production head shall be responsible for supervising and controlling all food processing operations from raw material receipt to transfer of semi-finished products for packing. The role ensures adherence to production plans, process parameters, quality standards, food safety requirements, yield targets, and operational efficiency while maximizing productivity and minimizing process losses.
KEY ROLES & RESPONSIBILITIES
PROCESSING OPERATIONS
- Supervise daily processing activities including washing, grading, sorting, cutting, blanching, cooling, IQF freezing, mixing, cooking, and other process operations as applicable.
- Ensure production targets are achieved in line with approved production plans.
- Monitor and control critical process parameters to maintain consistent product quality.
- Ensure smooth product flow between processing and packing operations.
PRODUCTION COORDINATION
- Coordinate with Planning, Procurement, Stores, QA, Maintenance, Utilities, and Packing departments for uninterrupted production.
- Ensure timely availability of raw materials, ingredients, utilities, and processing equipment.
- Monitor line balancing and manpower allocation for optimum productivity.
PROCESS CONTROL & YIELD MANAGEMENT
- Monitor process yield, recovery percentage, wastage, and product losses.
- Ensure compliance with standard recipes, formulations, processing parameters, and product specifications.
- Analyze production losses and implement corrective actions to improve yield and efficiency.
- Drive process optimization initiatives to improve productivity and reduce manufacturing costs.
QUALITY & FOOD SAFETY
- Ensure compliance with FSSAI, GMP, GHP, HACCP, ISO/FSSC 22000, BRCGS, and company quality standards.
- Verify in-process quality parameters, CCP monitoring, and product traceability.
- Prevent contamination, product mix-ups, and food safety risks during processing.
- Coordinate with QA for inspections, product approvals, and corrective actions.
EQUIPMENT & MAINTENANCE COORDINATION
- Ensure proper operation of processing equipment including washers, graders, blanchers, IQF freezers, conveyors, mixers, cookers, and utilities.
- Coordinate with the Engineering department for preventive and breakdown maintenance.
- Report equipment abnormalities and support continuous equipment improvement.
DOCUMENTATION & REPORTING
- Maintain production records, batch manufacturing records (BMR), process logs, yield reports, downtime reports, CCP records, and shift reports.
- Ensure accurate ERP/manual entries related to production activities.
- Prepare daily processing MIS and production performance reports.
SAFETY & COMPLIANCE
- Ensure adherence to all safety procedures, PPE requirements, housekeeping (5S), and environmental practices.
- Promote safe work practices and report unsafe conditions immediately.
- Ensure compliance with all statutory and company operational procedures.
TEAM MANAGEMENT
- Supervise processing operators, machine operators, and production helpers.
- Allocate manpower according to production priorities.
- Train employees on SOPs, GMP, food safety, equipment operation, and process discipline.
- Foster teamwork, accountability, and continuous improvement across the production floor.
AUTHORITY
- Allocate manpower and processing equipment based on production schedules.
- Stop processing operations in case of food safety, quality, equipment, or safety concerns.
- Recommend process improvements, yield enhancement initiatives, and operational changes.
- Reject non-conforming raw materials or in-process products in coordination with the QA department.
- Escalate production deviations, equipment failures, and food safety risks to the Production Manager.
