Qualifications

• Minimum 3 years of experience in Hygiene/Food Safety within hotels or resorts.

Job description

We are looking for an experienced Hygiene Manager with a strong hospitality background to oversee food safety, hygiene, sanitation, and quality standards across the resort. The candidate will be responsible for ensuring compliance with FSSAI, HACCP, GMP, and internal hygiene standards.

Key Responsibilities

• Manage hygiene and food safety standards across Kitchen, FB Outlets, Stores, Banquets, Staff Cafeteria, and other food handling areas.
• Conduct daily hygiene inspections and regular internal hygiene audits.
• Ensure proper food receiving, storage, preparation, cooking, holding, and serving practices.
• Monitor food temperatures, expiry dates, FIFO/FEFO, food labelling, and storage conditions.
• Ensure high standards of personal hygiene, grooming, handwashing, uniforms, and food-handling practices.
• Identify hygiene violations and ensure timely corrective and preventive actions.
• Maintain all hygiene records, checklists, audit reports, and compliance documentation.
• Coordinate with Executive Chef, FB, Housekeeping, Engineering, Purchase, Stores, and Pest Control teams.
• Monitor pest control activities and ensure preventive measures are effectively implemented.
• Conduct regular training and awareness sessions for employees on food safety, hygiene, sanitation, and HACCP practices.
• Handle hygiene-related guest complaints and investigate food safety incidents where required.

Job Expectations

• Coordinate and support FSSAI inspections, external audits, HACCP/ISO audits, and statutory compliance.
• Monitor cleaning and sanitation standards in kitchens, food production areas, restaurants, and back-of-house areas.
• Conduct regular checks for expired, contaminated, spoiled, or improperly stored food products.
• Prepare monthly hygiene reports and highlight major observations, risks, and improvement areas to management.

Minimum Qualification: Graduate/Diploma in Hotel Management, Food Technology, Microbiology, Food Science, or a related field. Minimum Job Experience: 3-8 years of relevant experience in Hygiene/Food Safety within hotels, resorts Reporting to: Culinary Director Travel: NA
