Job summary

The Hillgrove Hotel & Spa is seeking an experienced Outlet Manager to lead PK's Restaurant & Bar, focusing on exceptional guest experiences and high service standards. You will own the day-to-day operations and drive the outlet’s commercial performance.

You will lead and develop the team, coordinate with the kitchen and hotel management, and ensure compliance with HACCP and licensing requirements while delivering memorable experiences for guests.

Qualifications

• Previous supervisory/management experience in a restaurant, bar or hotel F&B operation.
• Strong leadership with ability to motivate a team and drive performance.
• Genuine passion for hospitality and delivering excellent customer service.
• Good commercial awareness including stock control, cost management and revenue generation.
• Excellent communication, organisation and problem-solving skills.
• Calm, professional and organised in a busy environment; proactive mindset.
• Knowledge of HACCP, food safety and licensing requirements.

About the Role

As Outlet Manager, you will take ownership of the day-to-day operation of PK's Restaurant & Bar, ensuring consistently high standards of service, food and beverage quality, and guest satisfaction.

You will lead, motivate, and develop your team, oversee daily operations, and help drive the outlet’s commercial performance. Working closely with the wider Food & Beverage and hotel management teams, you will create a positive working environment where colleagues feel supported and guests enjoy a memorable experience.

Key Responsibilities

• Lead, motivate, train, and develop the team, promoting a positive and collaborative working environment.
• Ensure the restaurant and bar are properly prepared for service, with excellent standards of cleanliness, presentation, and organisation.
• Maintain high standards of food and beverage quality, service delivery, and guest satisfaction.
• Handle guest feedback and resolve any issues promptly and professionally.
• Manage staff scheduling and daily staffing requirements to support efficient operations.
• Monitor stock levels, ordering, waste, and operating costs to maximise efficiency and profitability.
• Drive revenue through effective selling techniques, promotions, and opportunities to enhance the guest experience.
• Ensure compliance with HACCP, food safety, health and safety, licensing requirements, and hotel procedures.
• Work closely with the kitchen team to ensure smooth service and effective communication.

What We're Looking For

• Previous experience in a supervisory or management role within a restaurant, bar, or hotel Food & Beverage operation.
• Strong leadership skills and the ability to motivate a team through a hands-on approach.
• A genuine passion for hospitality and delivering excellent customer service.
• Good commercial awareness, including an understanding of stock control, cost management, and revenue generation.
• Excellent communication, organisational, and problem-solving skills.
• The ability to remain calm, professional, and organised in a busy environment.
• A proactive mindset, with the confidence to take ownership and identify opportunities for improvement.
• Knowledge of food safety, HACCP, and relevant licensing requirements.
• Flexibility to work shifts across weekdays, evenings, weekends, and busy periods as required.
