Job summary

Sheen Falls Lodge Limited in Ireland seeks a Head Pastry Chef to lead the pastry operation for our 5* fine dining restaurant and lounge. This hands-on role requires expert patisserie knowledge, menu planning with the Exec Chef, and strong leadership of the pastry team.

You will oversee pastry production, quality control, and sourcing local ingredients while maintaining HACCP standards and delivering exceptional guest experiences.

Qualifications

• Expert knowledge of patisserie, patisserie preparation and bread making.
• Experience leading pastry teams in fine dining settings.
• Ability to plan pastry menus in collaboration with executive chefs.

Responsibilities

• Plan and execute pastry menus for incl. afternoon teas and lounge menu.
• Maintain HACCP standards and high hotel hygiene.
• Lead and develop pastry team and coordinate with Exec Chef.
• Ensure cost control and quality in pastry production and service.
