Job summary

Head Pastry Chef at Sheen Falls Lodge in Kenmare, Co. Kerry, leads a hands-on pastry operation for 5* dining, delivering patisserie, bread making and desserts to the highest standards.

Reporting to the Exec Chef, you will plan and execute pastry menus, coordinate with the kitchen team, uphold HACCP and hygiene standards, and drive a distinctive pastry offer for afternoon teas and lounge service.

Qualifications

• Expert knowledge of patisserie and pastry preparation.
• Experience in fine dining or Michelin standard environments.
• Ability to plan and execute pastry menus with precision.
• Strong HACCP and kitchen hygiene discipline.

Responsibilities

• Oversee pastry section and pastry menu development.
• Coordinate with Exec Chef to deliver afternoon teas and lounge pastries.
• Lead and develop the pastry team while maintaining quality.
