Job summary

Sheen Falls Lodge, part of Relais & Châteaux, seeks a Head Pastry Chef to lead and develop the pastry team. You will oversee patisserie, bread making, and dessert menus, ensuring exceptional quality and presentation for the Falls fine dining and lounge experiences.

The role requires strong pastry expertise, leadership, and a track record in high-end dining, with a focus on HACCP and local ingredient utilization.

Qualifications

• Expert knowledge of patisserie, patisserie preparation and bread making.
• Plan and execute pastry menus in conjunction with the Exec Chef, including afternoon teas and lounge menu.
• Proven experience in 5* fine dining or top tier restaurants with high pastry standards.
• Flexible, well organized and able to coordinate with local ingredient sourcing while maintaining HACCP and hotel standards.

Responsibilities

• HACCP/Kitchen Hygiene, Uniform, and staff presentation.
• Ensure high food quality across pastry production and service.
• People management and development within the pastry team.
• Maintain pastry GP’s and cost controls.
• Oversee food production and pastry service.
