Sheen Falls Lodge Limited in Ireland seeks a Head Pastry Chef to lead our pastry team across the Falls fine dining restaurant and Sheen Lounge. The role requires expert patisserie knowledge, creativity, and strong leadership to deliver exceptional dessert experiences for our guests.

You will collaborate with the Exec Chef to plan and execute pastry menus, manage staff, and uphold HACCP standards while sourcing local ingredients.

Qualifications

• Expert knowledge of patisserie, patisserie preparation and bread making.
• Proven track record in a 5* fine dining pastry program.
• Experience coordinating pastry menus and staff management.

Responsibilities

• Lead pastry operations in a 5* fine dining setting.
• Plan and execute pastry menus in collaboration with Exec Chef.
• Oversee HACCP and kitchen hygiene within pastry section.
• Manage pastry staff and training.
• Ensure quality and cost control of pastry production.
• Develop offerings for afternoon teas and lounge menu.
