Job summary

Sheen Falls Lodge Limited is seeking a Head Pastry Chef to lead pastry production in our 5* fine dining and Sheen Lounge. The role requires hands-on leadership, strong patisserie expertise, and the ability to develop pastry menus in collaboration with the Exec Chef.

You will manage pastry operations, maintain high quality and consistency, and ensure HACCP compliance while working with locally sourced ingredients.

Qualifications

• Expert knowledge of patisserie, patisserie preparation and bread making.
• Ability to plan and execute pastry menus in conjunction with Exec Chef.
• Experience with HACCP and high standards in a fine dining environment.

Responsibilities

• Assist Exec Head Chef in managing pastry production and menus.
• Coordinate pastry kitchen operations, including afternoon teas and lounge offerings.
• Ensure HACCP compliance and health & safety across pastry operations.
