Job summary

Fota Island Resort is recruiting a dynamic and experienced Bar Manager to lead our busy beverage operation across multiple outlets, including conferences and banqueting. The role involves managing staff, maintaining high service standards, and driving revenue with innovative menus.

The ideal candidate will have proven bar management experience in hospitality, strong leadership, budgeting and stock control, and the flexibility to work evenings, weekends, and holidays.

Qualifications

• Proven experience as a Bar Manager or similar role in a hotel or busy bar setting with multiple outlets.
• Strong leadership and team management skills.
• Excellent knowledge of bar operations, including beverage menu development, cocktail preparation, wine selection and industry trends.
• Good financial understanding, including budgeting and stock control.
• Ability to work flexible hours, including evenings, weekends, and holidays.

Responsibilities

• Manage daily operations of the bar outlets, ensuring smooth and efficient service.
• Ensure compliance with all alcohol licensing laws and regulations.
• Recruit, train, and supervise bar staff.
• Create and maintain a high-quality beverage menu, including signature cocktails.
• Monitor inventory and place orders to maintain stock levels.
• Ensure compliance with health and safety regulations.
• Drive revenue through promotions, events, and upselling techniques.
• Handle customer queries and resolve complaints promptly and professionally.
• Maintain cleanliness and presentation standards of the bar area.
• Work closely with the Resort F&B Manager and Hotel Management team.
