Responsibilities include breaking down sub-primals into retail cuts, producing sausages and burgers, and operating slicers and vacuum packaging systems. You will maintain HACCP logs and assist customers with preparation tips.

Qualifications

• Minimum 2 years of experience.
• HACCP knowledge and implementation experience.
• Specialising in food safety and retail butchery.
• English language at C1-Advanced level.

Responsibilities

• Perform precision block work and retail cut preparation.
• Utilise traditional block-work butchery for counter-ready cuts.
• Manufacture house-recipe value-added meats (sausages, burgers, stuffed items).
• Operate retail processing equipment (mincers, bowl cutters, vacuum packaging, slicers).
• Maintain daily temperature logs and HACCP compliance files, with batch traceability.
• Provide customer guidance on cuts, preparation, and cooking techniques.
