Job summary

SAPO seeks an experienced F&B operations professional to act as the cost control and systems backbone for multiple venues, reporting to the Group F&B Director. This role is not a chef or floor manager position, but focuses on cost, systems, and standards across the group.

You will own cost control processes, menu costing for new openings, POS/systems maintenance, and SOP implementation in Bahasa Indonesia. Based in Lombok with potential travel across Lombok, Bali, and Java as the group expands.

Qualifications

• 4+ years in F&B management, incl. cost control.
• Advanced Excel used daily.
• Fluent Bahasa Indonesia and professional English.
• Experience with a modern POS and inventory system.
• Right to work in Indonesia; based in/relocating to Lombok.

Responsibilities

• Manage cost control, weekly cost reporting, inventory cycles, variance and waste.
• Oversee POS and menu maintenance, procurement rollout, SOPs in Bahasa Indonesia, HACCP and temperature logs.
• Ensure daily operations standards, staffing and productivity, F&B execution of events, and acting for the Director in her absence.
• Lead new openings menu costing, pre-opening lists, supplier sourcing, staff training and handover.
