Job summary

Pengiklan Anonim, a well-established restaurant group in Jakarta, is seeking an experienced Bakery & Pastry Executive Chef to lead our bakery and pastry function across multiple outlets. You will oversee product development, production standards, quality control, and cost management, while mentoring teams and driving innovation.

The role offers flexible engagement options including full-time, part-time, consulting, or project-based arrangements.

Qualifications

• 5-7+ years in bakery/pastry, hospitality, or related industries with managerial experience.
• Strong technical expertise in bread, viennoiserie, cakes, and related products.
• Proven ability to manage bakery operations across multiple outlets or locations.
• Excellent understanding of food costing, yield management, and production planning.
• Creative and proactive, with strong leadership and communication skills.

Responsibilities

• Lead and oversee the bakery and pastry function across multiple outlets, ensuring consistent quality and standards.
• Develop and execute bakery and pastry strategy aligned with business objectives and brand direction.
• Lead product development, seasonal offerings, and menu refreshes.
• Standardize recipes, production methods, SOPs, and quality standards across locations.
• Oversee production processes for efficiency, safety, and on-time availability.
• Manage costing, yield, pricing, and profitability to meet targets.
• Identify new ingredients, suppliers, techniques, and equipment for quality and efficiency.
• Mentor and develop bakery teams to maintain high performance.
• Conduct quality controls and outlet visits to ensure compliance with standards.
• Collaborate with Operations, Procurement, Marketing on launches and promotions.
• Drive process improvements in production and customer experience.
