Raffles Jakarta invites a Director of Food & Beverage to lead luxury dining operations across restaurants, bars, banquets and in-room dining. You will shape culinary journeys, drive commercial success and uphold the warmth and timeless elegance of the Raffles brand.

You will oversee strategy, standards and team development, ensuring exceptional guest experiences while maintaining compliance and sustainability as core values.

Qualifications

• Bachelor in Hospitality Management or related field required.
• Senior leadership experience in F&B at upscale luxury hotel or resort.
• Experience implementing service rituals, SOPs and quality standards.
• Strong knowledge of culinary/beverage programs and guest service standards.
• Strong commercial acumen: revenue management, pricing, budgeting.
• Experience in international luxury brands and adapting practices locally.
• Digital fluency with hospitality tech and AI applications.

Job Description

We invite you to join the world of luxury hospitality at Raffles Jakarta as our new Director of Food & Beverage. As a key member of the hotel’s leadership team, you will shape and deliver an exceptional culinary and service journey across all food and beverage operations, including restaurants, bars, banquets and in-room dining. You will lead teams, drive commercial performance and uphold the highest standards of service and operational excellence, ensuring every experience reflects the warmth, sophistication and timeless elegance of the Raffles brand.

Key Responsibilities

• Provide strategic direction and oversee daily operations across restaurants, bars, banquets and in-room dining, ensuring a consistent luxury guest experience.
• Develop innovative culinary, beverage and service concepts that position Raffles Jakarta as a preferred destination for hotel guests and the local community.
• Drive revenue growth and profitability through revenue management, menu and pricing strategies, promotions, upselling and effective cost control.
• Manage departmental budgets, forecasts, financial performance and key operational KPIs, using data and guest insights to inform decisions.
• Establish and monitor service rituals, SOPs and quality standards aligned with Raffles brand expectations.
• Lead, inspire and develop diverse teams, fostering belonging, accountability, continuous learning and high performance.
• Oversee food safety, hygiene, sanitation and compliance with relevant regulations, hotel policies and operational standards.
• Collaborate with Culinary, Sales and Marketing, Rooms, Events and other departments to create integrated guest experiences and maximise business opportunities.
• Monitor guest feedback, online reputation and market trends, translating insights into improvements to service quality, offerings and satisfaction.
• Leverage hospitality technologies, digital platforms and relevant innovations, including AI-enabled tools where appropriate, to enhance productivity and guest experiences.
• Build relationships with suppliers, partners and stakeholders to support product quality, cost efficiency and innovative F&B initiatives.
• Uphold ethical, sustainability and CSR commitments and ensure responsible use of resources in daily operations.

Qualifications

What will you bring to this role?

• A bachelor’s degree in Hospitality Management, Business Administration or a related field is required. Advanced certifications or training in Food & Beverage, Culinary Arts or Luxury Hospitality Management are an advantage.
• Extensive senior leadership experience in Food & Beverage operations within an upscale or luxury hotel or resort, managing complex multi-outlet operations and large, diverse teams.
• Proven experience implementing service rituals, SOPs, quality standards and operational processes aligned with luxury hospitality expectations.
• Strong knowledge of culinary arts, beverage programmes and refined service standards, with a passion for elevating the guest experience.
• Strong commercial and strategic acumen, including market trends, revenue management, pricing strategies, budgeting and financial stewardship.
• Experience in international hospitality environments or global luxury brands, with the ability to adapt best practices to local culture and guest expectations.
• Digital fluency in hospitality technologies, productivity tools and digital platforms, including relevant AI applications, to improve efficiency and service.
• Ability to inspire, mentor and develop teams while fostering belonging, growth, accountability and collaboration.
• Excellent verbal and written communication skills in English and Indonesian; additional languages are an advantage.
• Strong analytical skills to interpret financial results, operational KPIs, guest feedback and reputation metrics and turn insights into practical strategies.
