Soori Bali is seeking a skilled Chinese Chef (Sous Chef) to join the culinary team for our new Chinese restaurant. Reporting directly to the Resort Manager, the successful candidate will take ownership of key stations in the kitchen, execute dishes to a consistently high standard, and help bring the restaurant's Chinese menu to life during pre-opening and daily service.
This is a hands-on cooking role for a chef with strong technical grounding in Chinese cuisine who thrives on precision, consistency, and craft in a luxury resort setting.
Key responsibilities
- Take ownership of assigned kitchen stations (e.g. wok, dim sum, roasting, sauces and stocks) and ensure consistent quality, presentation and timing.
- Prepare dishes according to standard recipes, portion specifications and presentation guidelines set by the Hotel.
- Apply strong knowledge of Chinese cooking techniques, ingredients, sauces, stocks, dim sum, roasting, wok preparation and regional specialties at station level.
- Support the Hotel during menu tastings and dish refinement, incorporating feedback accurately.
- Assist with pre-opening kitchen setup, mise en place systems and station workflow for the new restaurant.
- Help maintain ingredient quality and consistency, and flag supplier or quality issues to senior chefs.
- Support and mentor junior and commis chefs at your station, sharing technique and best practice.
- Help transfer specialist Chinese cooking knowledge to Indonesian team members.
- Maintain high food-safety, hygiene and sanitation standards at all times.
- Manage station-level stock, minimize wastage, and support inventory counts.
- Contribute to Chinese menu items for private dining, weddings, festive occasions, groups and special events.
- Coordinate with the wider kitchen and service team to ensure smooth service flow.
- Respond professionally to dietary requirements and guest feedback when engaged directly.
Candidate requirements
- Good working English is required for communication with the kitchen team and management.
- At least 4 years of professional culinary experience, with solid experience in Chinese cuisine.
- At least 2 years operating at Senior Chef level/ Junior Sous Chef or equivalent station responsibility.
- Experience in a Chinese restaurant located in hotel setting or recognized Chinese restaurant or premium independent restaurant is an advantage.
- Solid command of Chinese cooking techniques relevant to your station (wok work, dim sum, roasting, sauces/stocks, or regional specialties).
- Restaurant pre-opening exposure is a plus but not required.
- Good understanding of portion control, food safety and basic stock/inventory practices.
- Able to work well within a multicultural kitchen team in a calm and professional manner.
- Mandarin or Cantonese would be an advantage.
- Culinary qualification or equivalent professional training is preferred.
- Willing to relocate and be based full-time in Bali.
