Qualifications

• Minimum 1–2 years of butcher or meat prep experience.
• Strong knowledge of meat preparation and handling.
• Good knife skills and precision in trimming.

Responsibilities

• Perform daily meat preparation according to specifications.
• Handle different meat cuts safely and properly.
• Ensure proper meat storage, labeling, temperature control, and FIFO.
• Prepare meat for processing, seasoning, and smoking.
• Maintain consistent portion sizes and quality.
• Assist the Smoker Specialist with smoking preparation and operations.
• Learn smoking techniques, smoker operation, temperature control, and doneness.
• Gradually assume responsibility for smoking tasks as skills develop.
• Slice, portion, and prepare finished smoked products.
• Follow recipes, SOPs, and instructions from the Smoker Specialist/Chef.
• Maintain cleanliness and organization of meat prep and kitchen areas.
• Follow food safety, hygiene and meat handling procedures.
• Maintain and clean knives, boards, smoker equipment, and tools.
• Assist with stock checks and minimize food waste.
• Support kitchen team during daily operations and busy periods.
• Perform other duties to ensure smooth operations.
