Job summary

The Hong Kong Jockey Club is seeking a skilled Chef de Partie to join our Catering Department at the Sha Tin Clubhouse. You will assist in supervising and coordinating a la minute orders, support the Sous Chef, and help maintain consistent quality in a fast-paced environment.

With at least 3 years of fine-dining experience in reputable hotels or clubhouses, you should understand cost control, HACCP and daily procurement. Exposure to Michelin-starred operations is an advantage.

Qualifications

• Minimum 3 years' relevant experience in fine-dining restaurants.
• Exposure to Michelin-starred operations is an advantage.
• Understanding of daily operation, cost control and procurement; HACCP and safety awareness.

Responsibilities

• Assist in supervision and coordination of preparing and cooking a la minute orders.
• Prepare the daily requisition for all required food items.
• Ensure that all food products are served in accordance with policies, guidelines and recipes.
• Assist Sous Chef and Chef de Partie with recipes and new dish presentations.
• Monitor cost control policies and procedures.
• Maintain cleanliness and proper handling of kitchen equipment and work areas.
• Follow safety and hygiene standards set by The Hong Kong Jockey Club.
