Job summary

Island Shangri-La, Hong Kong, is seeking a Chef de Cuisine – Ming Pavilion to lead a high-end kitchen and deliver exceptional dining experiences in a luxury hotel setting.

You will oversee daily operations, develop authentic Hokkien menus, manage costs and ensure top-tier hygiene and safety standards, working closely with the Executive Chef. Fluency in English and Chinese is essential for cross-cultural collaboration.

Qualifications

  • Minimum 8 years in luxury hotels with 3 years in a leadership role.
  • Strong knowledge of Chinese cuisine; Hokkien cuisine is an advantage.
  • Experience in kitchen management, menu planning, cost control and HACCP.
  • Strong leadership, coaching and team-management skills.
  • Fluent in English and Chinese, written and spoken.

Responsibilities

  • Oversee daily kitchen operations, ensuring high food quality, presentation and safety.
  • Develop and review authentic Hokkien menus, seasonal offerings and promotions.
  • Monitor food costs, inventory, productivity and overall kitchen performance.
  • Ensure hygiene, sanitation and HACCP compliance.
  • Lead, train and develop the kitchen team to meet operating objectives.
  • Collaborate with the Executive Chef on budgeting, planning and business initiatives.
  • Review guest feedback to elevate the dining experience.
