Job summary

The Ivy Asia in Australia is seeking a skilled Sushi Chef to join our open-plan sushi bar. You will prepare sushi rolls, nigiri, and sashimi with precision, using traditional and modern techniques, while maintaining top quality during peak hours.

Qualifications

• Proven experience as a Sushi Chef or similar role in a high-volume restaurant or sushi bar.
• Strong sushi-making skills with a focus on traditional techniques.
• Excellent knife skills and attention to detail.
• Ability to work efficiently under pressure in a fast-paced environment.
• Knowledge of sushi ingredients, sourcing, and quality control.
• Stay updated on sushi trends and techniques.
• Be able to remain calm and professional in an open kitchen.

Responsibilities

• Prepare and assemble sushi rolls, nigiri, sashimi, and other sushi dishes according to traditional recipes and standards.
• Ensure the highest standards of quality, flavour, and presentation in every sushi dish.
• Manage inventory of sushi ingredients and supplies, and coordinate ordering as needed.
• Maintain cleanliness and organisation of the sushi station, including sushi knives and other equipment.
• Uphold sushi-making techniques and standards.
