Job summary

Mission Mars is seeking a Sous Pizzaiolo with senior Pizzaiolo experience in the UK. You will work closely with the Head Pizzaiolo to run daily kitchen operations, ensure top quality across services, and drive team development.

This is both a leadership role and a craft position within Rudy's Pizzeria. Applicants should demonstrate proven kitchen leadership, expert Neapolitan technique, and a passion for maintaining high standards of food safety and hygiene.

Qualifications

• Proven leadership experience in a high-volume kitchen.
• Expert-level Neapolitan pizza knowledge and technique.
• Ability to manage full service under pressure.
• Strong coaching and communication to motivate the team.
• Meticulous food safety and hygiene standards.
• Ambition to progress to Head Pizzaiolo.

Responsibilities

• Supporting the Head Pizzaiolo in running kitchen.
• Managing station prep, workflow, and service execution across every shift.
• Leading and motivating the kitchen team.
• Maintaining Rudy's quality standards and recipe adherence consistently.
• Overseeing food hygiene, allergen compliance, and health & safety.
• Contributing to training, coaching, and development of the team.
• Taking full ownership of the kitchen in the Head Pizzaiolo's absence.
• Supporting stock management, ordering, and waste reduction initiatives.

Position: Sous Pizzaiolo - SENIOR PIZZIOLO EXPERIENCE NEEDED*

Salary: £15.35 | Tips & Tronc | Bi-Weekly Bonus

Contract: Full time

The Sous Pizzaiolo sits at the heart of the Rudy's Pizzeria. Working closely with the Head Pizzaiolo, you'll manage the day-to-day running of the kitchen, maintain quality across every single service, and make sure the team around you are developing and performing at their best. This is a leadership role as much as it is a craft role.

Your Day-to-Day

• Supporting the Head Pizzaiolo in running kitchen
• Managing station prep, workflow, and service execution across every shift
• Leading and motivating the kitchen team
• Maintaining Rudy's quality standards and recipe adherence consistently
• Overseeing food hygiene, allergen compliance, and health & safety
• Contributing to training, coaching, and the ongoing development of the team
• Taking full ownership of the kitchen in the Head Pizzaiolo's absence
