Cornwall Staff Agency Limited is seeking an experienced Sous Chef or Senior Sous Chef to join the brigade of a stunning 4-star country house hotel in Cornwall. Working closely with the Head Chef, you will help lead the kitchen and take charge of service in their absence.

You’ll be involved in leading and developing the kitchen team, maintaining exceptional food and presentation standards, and driving menu development and costing while upholding hygiene and food safety standards.

Qualifications

• Experience as Sous Chef or Senior Sous Chef with leadership ability.
• Strong menu development and costing skills.
• Solid food safety knowledge and standards.

Responsabilités

• Lead kitchen team and supervise service when Head Chef is absent.
• Develop menus and costing with the team.
• Oversee purchasing, stock control and wastage.
• Train and develop junior chefs.
• Ensure exceptional hygiene and food safety standards.

The Role

Working closely with the Head Chef, you'll help lead the kitchen brigade and take charge of service in their absence.

You’ll be involved in:

Leading and developing the kitchen team

Maintaining exceptional food and presentation standards

Menu development and costing

Purchasing, stock control and waste reduction

Training and developing junior chefs

Ensuring excellent kitchen hygiene and food safety standards
