Job summary

Establo Lounge in Littlehampton is seeking a dedicated Sous Chef to join our kitchen team. You’ll work closely with the Head Chef, leading service, coaching the team and ensuring every dish that leaves the pass is exceptional.

You’ll oversee prep, par levels, stock and handovers while maintaining high standards of cleanliness, safety and speed across shifts. If you love real cooking and developing others, you’ll fit right in.

Qualifications

• A passionate cook who takes real pride in fresh ingredients, clean specs and consistently perfect dishes.
• Punctual and reliable; shows up and gives full effort every shift.
• Leads by example, upholds high standards on the pass and supports the team.
• Confident taking ownership of a shift in Head Chef's absence, from prep to stock and handovers.
• A team player who coaches and develops colleagues and helps them improve.
• Experience as Sous Chef / Junior Sous Chef / Chef de Partie ready for next step.

Responsibilities

• Lead kitchen shifts with confidence, keeping service smooth, organised and on spec from prep through to the final plate
• Be the Head Chef's right hand - supporting day-to-day operations, stepping up in their absence, and helping the kitchen deliver consistently strong results
• Set the tone for high standards on the pass, with a sharp eye for food quality, pace, cleanliness, hygiene and safety
• Take ownership of key kitchen routines including prep and par, stock control, waste, orders and effective shift handovers
• Coach and support the team around you, helping new and existing chefs build confidence, give the push, grow their skills and deliver great food every shift
