Job description

We're currently recruiting an ambitious Sous Chef to help us create exceptional food experiences for Levy on a full-time basis, contracted to 40 hours per week. As a Sous Chef, you will be responsible for preparing and serving food that brightens our clients' and customers' days, within the market-leading food service company in the UK. Role Summary:

Assist in delivering catering support services to provide competitive advantages to the Academy teams at Wolverhampton Wanderers Football Club. Collaborate with the Training Ground Head Chef, Academy Lead Chef, and nutritionist for all food production across the Academy & staff.

Help develop performance menus alongside the Lead Chef and nutritionist.

Key Responsibilities:

  1. Work with the nutritionist and Lead Chef to plan innovative, performance-focused weekly menus for the Academy.
  2. Deputise in the Lead Chef's absence in the Academy and training ground when required.
  3. Assist in creating performance recipes to meet sport nutrition requirements, providing full recipes to the Head of Nutrition to ensure high quality and proper portion control.
  4. Maintain high standards of cleanliness and safety throughout all kitchen areas, completing mandatory food safety records.
  5. Support junior chefs in developing culinary skills, nutritional knowledge, and independence.
  6. Coordinate with the Lead Chef to schedule work and ensure food production aligns with nutritional requirements and daily operations.
  7. Work with the Lead Chef to minimise food and supply waste.
  8. Lead cooking lessons for senior academy players on a rotation basis.
  9. Assist in conducting food safety risk assessments and reviewing food safety management systems.
  10. Maintain and rotate stock levels to uphold standards.
  11. Check delivery notes against requisitions daily, report discrepancies, and follow procurement procedures.
  12. Work flexibly, including evenings and weekends, to support the facility's needs.
  13. Travel to away fixtures and collaborate with hotel chefs to ensure food quality and presentation.
  14. Be available to work on bank holidays, including Christmas Day and New Year if required.
  15. Lead and support the culinary team in the absence of the Lead Chef.
  16. Maintain a proactive and forward-thinking approach to work efficiency.

Person Specification: Skills, Abilities, and Experience

Essential:

  • Excellent organisational skills for yourself and team members.
  • Ability to work under pressure.
  • Proficiency in Microsoft 365 (Excel & Word).
  • Food Hygiene Level 2 or higher.
  • Forward-thinking skills and attention to detail.
  • Ability to identify and solve problems independently, knowing when to escalate.
  • Strong personnel management skills and ability to build trust.
  • Effective communication at all levels, maintaining discretion.
  • Flexibility and adaptability to change.
  • Ability to prioritise conflicting demands.
  • Willingness to work necessary hours, including evenings and weekends.
  • Continuous professional development and a desire to learn.
  • Experience in professional sport (desirable but not essential).
  • Willingness to travel domestically and internationally (desirable but not essential).
  • Experience working with hotel chefs for away fixtures (desirable but not essential).
