Job summary

Coleg Cambria is seeking a Sous Chef to run live service in our college restaurant and patisserie, shaping seasonal menus while leading the kitchen alongside the Head Chef.

You will mentor hospitality students, manage operations, and support budgeting and sustainability efforts within an education-based hospitality environment.

Qualifications

• Level 3 in Professional Cookery and Level 2 Food Safety & Hygiene required.
• Worked in excellent 3 or 4 star establishments.
• At least 3 years previous experience of working in a kitchen environment at a similar level.
• Impeccable food hygiene and housekeeping standards.

Responsibilities

• Drive Culinary Excellence: support Head Chef in delivering high-quality, contemporary menus.
• Manage & Deputise: act as duty manager and oversee daily kitchen operations.
• Inspire Future Chefs: mentor hospitality students and apprentices.
• Commercial Operations: assist with menu costing, stock control, and budgets.

As our new Sous Chef, you will spend your days running live service in our new restaurant and patisserie, bringing seasonal, modern menus to life, and stepping up to lead the kitchen alongside the Head Chef. What You Will Do

• Manage & Deputise: Act as duty manager and step in for the Head Chef when required, overseeing daily kitchen operations and resources.
• Inspire Future Chefs: Mentor hospitality students and apprentices, working alongside academic staff to continuously elevate kitchen standards.
• Commercial Operations: Assist with menu costing, stock control, food purchasing budgets, and monthly profit and loss accounts.
