Job description

We’re looking for a Sous Chef to join Convene || etc.venues’ prestigious culinary team at our County Hall property in London. This role requires experience in high-volume environments, with a focus on presentation and conference-style catering.

As a key member of the culinary team, you’ll assist and deputize for the Head Chef in managing, preparing, delivering, and presenting all Food and Beverage services to ensure the highest level of client satisfaction.

What You'll Do:
Food Preparation
  • Ensure prompt service of all meals and services to meet company standards and client satisfaction.
  • Assist the Head Chef in preparing and presenting food for the restaurant and special functions, including during service periods.
  • Help plan and cost menus as required.
  • Ensure preparation and presentation methods comply with recognized catering standards under the guidance of the Head Chef.
Management of Staff
  • Assist in recruiting kitchen team members in the Head Chef’s absence.
  • Manage the back-of-house food service team daily, implementing training and development programs.
  • Conduct weekly team meetings to discuss operations and staffing issues.
  • Handle performance management issues in the Head Chef’s absence, with the General Manager’s consultation.
  • Prepare weekly staff rotas and complete timesheets.
  • Maintain high standards of appearance within the catering department.
Operational and Customer Service
  • Order food and beverages to ensure smooth daily operations in the Head Chef’s absence.
  • Liaise with facilities to order disposables and cleaning supplies.
  • Ensure waiting staff are familiar with menus and conduct pre-service debriefs.
  • Respond promptly to client requests and feedback, reporting issues to the Head Chef.
  • Assist with serving and ensure catering standards are maintained during events.
  • Coordinate with the events team for upcoming events and operational requirements.
  • Conduct daily quality and standards checks around catering areas.
  • Maintain a visible presence in all restaurant areas to uphold service standards.
  • Work with the team to ensure effective stock management and reconciliation.
  • Monitor stock levels and assist the General Manager with stock and purchasing reports in the Head Chef’s absence.
  • Control staff budgets and overtime payments for the back-of-house team.
Health & Safety
  • Ensure compliance with all health, safety, and fire regulations.
  • Maintain high standards of personal hygiene and uniform standards.
  • Ensure the cleanliness and maintenance of kitchens and dining areas.
  • Adhere to COSHH and HACCP regulations and assist in risk assessments.
