Job summary

Nobu Hotel London Portman Square is seeking a Senior Sushi Chef to join our renowned Nobu dining team in West London. You will craft sushi with precision, lead service, and collaborate with the Head Sushi Chef to create Omakase and tasting menus while upholding Nobu’s standards.

• Exceptional knife skills and knowledge of Japanese culinary traditions.
• Passion for craftsmanship and creativity to deliver Nobu’s signature dining experience.

Responsibilities

• Prepare, cut, cook and present sushi to Nobu’s exacting standards.
• Ensure station is set up and operates efficiently during service.
• Follow recipes and maintain consistency across dishes.
• Create Omakase, tasting and special menus with Head Sushi Chef.
• Uphold strict hygiene, safety and sanitation practices at all times.
• Store raw materials safely and maintain cleanliness in all areas.
• Monitor Health & Safety compliance and report issues promptly.
• Maintain equipment in safe working condition and report breakdowns.
• Handle allergy requests with care and communicate with service teams.
• Coach and train new team members to foster excellence.
• Attend team briefings and contribute ideas for improvement.
