Fallow in London is seeking a Senior Sommelier to shape our wine program and elevate the guest journey. Working with the Head Sommelier, you will apply depth of knowledge and leadership to a fast-moving, sustainability-driven kitchen and dining room.

The role rewards expertise in thoughtful pairings, staff mentoring, and supplier partnerships, with a focus on sourcing distinctive wines that reflect Fallow’s ethos.

Qualifications

• Proven experience as a Sommelier in a high-quality restaurant.
• WSET Level 2 (minimum) or equivalent certification.
• Confident in guest interaction with excellent communication.
• Passion for wine and sustainability with eye for unique producers.
• Team player with collaborative mindset and professional attitude.

Responsibilities

• Provide expert guidance on wine and beverage selections with thoughtful pairings.
• Work with Head Sommelier to curate a diverse, sustainable wine list.
• Build relationships with suppliers to source distinctive wines reflecting our ethos.
• Lead by example in service standards and wine knowledge for memorable guest experiences.
• Train and mentor junior team members to foster growth and enthusiasm for wine.
• Manage stock levels, conduct regular inventory, and support cost control.
