Senior Restaurants Manager
Job Introduction
What is the role?
As a Senior Restaurant Manager, you will be responsible for maximising the profitability of the division now and in the future, achieving excellent customer service and hospitality standards through your teams. You will proactively drive and develop future business, influence decisions, and identify opportunities and risks using external market trends and competitor insights. As part of the senior retail leadership team, you will lead, develop, and inspire your division and the wider store, championing initiatives across services, operations, and wellbeing.
Responsibilities include:
- Driving all commercial opportunities, seeking to improve sales and profitability while managing costs within budgets and ensuring world-class standards front and back of house.
- Leading and inspiring a skilled management team to sustain high performance through coaching and development.
- Collaborating with senior leadership to implement the company vision and initiatives.
- Challenging and developing operational efficiencies across the division and store.
- Monitoring sales and profit, taking appropriate actions on stock loss and wastage.
- Driving service standards across all Restaurants (including concessions), monitoring guest reviews, and taking action accordingly.
- Planning effectively for key trading and calendar events such as Easter, Valentines, and Christmas.
- Managing concession relationships, supporting sales plans, and highlighting risks and opportunities.
- Ensuring full compliance with trading standards, food hygiene, health and safety legislation, pest control, and security standards.
How you'll do it
- Being commercially astute, responsive to customer needs, market, and competitor trends, with a clear plan to deliver results.
- Having experience in high-volume, fast-paced restaurant operations with a focus on luxury service.
- Being a great communicator, building strong relationships with customers, team members, stakeholders, and concessions.
- Engaging and influential across various functions to drive change.
- Remaining pragmatic and solutions-oriented, calm under pressure, providing clear guidance.
- Leading with a service focus, coaching team members to improve performance and service.
- Being a collaborative team player, supporting projects and cross-functional meetings.

KPIs
- Sales: Total OB and concession sales compared to last year and plan.
- Stock loss: Wastage and food waste.
- Service: Guest reviews (e.g., OpenTable).
- People: Absence, turnover, engagement, and compliance.
- Payroll: Cash and percentage to sales.
