Job summary

Fairmont St Andrews is seeking an experienced Assistant Director of Food & Beverage to join our leadership team. You will drive performance and day-to-day operations across resort F&B outlets, working closely with the Director of F&B and Outlet Managers to ensure exceptional guest experiences.

As second in command, you will deputise when required and lead strategic direction, labour planning, revenue management and service standards across multiple venues within the resort.

Qualifications

• Strong F&B management experience within a high-volume hotel, resort or multi-outlet environment.
• Proven ability to lead managers and large operational teams across outlets.
• Solid understanding of labour, revenue, productivity, cost control and profitability.

Responsibilities

• Provide leadership and strategic direction for the department.
• Offer senior operational oversight across all F&B outlets throughout the resort.
• Collaborate with Outlet Managers to ensure service standards and performance.
• Deputise for the Director of F&B during necessary periods.
• Support busy periods, large events and peak trading times with decisions.
• Cover management during annual leave or operational need.
• Coach and develop Outlet Managers and F&B leadership teams.
• Drive engagement, accountability and high performance.
• Monitor guest feedback and opportunities to improve the guest journey.
• Assist in budgeting, forecasting and commercial planning.
