Job summary

Mandarin Oriental Mayfair in London is seeking a Senior Chef de Partie to join our luxury Culinary team. You will lead a designated kitchen section, support senior chefs, and ensure dishes meet Mandarin Oriental standards with timely execution.

The role operates on rotating shifts, including mornings, evenings, nights, weekends and bank holidays, totaling around 40 hours per week. Join a famed hospitality group known for exceptional guest experiences and career development.

Responsibilities

  • Leading your designated section with a strong sense of ownership, urgency, and accountability while maintaining the highest culinary standards.
  • Supporting the Head Sushi Chef, Chef de Cuisine, Sous Chef, and Junior Sous Chef in the day-to-day operation of the kitchen.
  • Preparing, producing, and presenting food items in accordance with established recipes, plating guides, and Mandarin Oriental standards.
  • Ensuring all food is prepared and delivered in a timely and efficient manner to support seamless service and exceptional guest experiences.
  • Maintaining a thorough understanding of menu items, ingredients, preparation methods, and presentation standards.
  • Assisting with daily and weekly production planning, market lists, stock control, and inventory management.
  • Minimising food waste through effective stock rotation, portion control, and adherence to FIFO procedures.
  • Ensuring all food safety, hygiene, and sanitation standards are consistently upheld in accordance with company policies and legislative requirements.
  • Maintaining a clean, organised, and safe workstation, ensuring kitchen equipment is operated correctly and responsibly at all times.
  • Reporting equipment issues, food quality concerns, and potential health and safety risks promptly to senior kitchen management.
  • Training, guiding, and supporting junior colleagues to promote continuous development and operational excellence.
  • Building strong working relationships across all kitchen sections and departments to ensure effective communication and teamwork.
  • Demonstrating flexibility to support a multi-outlet, three-meal-period operation and provide cover where required.
  • Upholding Mandarin Oriental's standards of professionalism, personal presentation, and commitment to delivering exceptional guest experiences.
  • Carrying out any other reasonable duties as assigned by management in support of the hotel's operational requirements.

As a Senior Chef de Partie at Mandarin Oriental Mayfair, you will be responsible for:

As a Senior Chef de Partie, you will be working on a rotating shift basis, Monday to Sunday, 40 hours a week. Shift patterns will vary from morning, evening, and night shifts (including weekends and bank holidays), so flexibility is required where applicable.
