Job summary

Bistro Sablé in Islington, London, is seeking a Senior Assistant General Manager to be the operational heartbeat of the restaurant. You will lead front-of-house, mentor staff and shape guest experiences while upholding our Parisian-inspired ethos and high standards.

You’ll manage daily service, drive financial performance, and collaborate on menus and wine offerings with the sommelier. The role requires 3–5 years in a senior F&B role, warmth, resilience, and a passion for exceptional hospitality

Qualifications

• A minimum of 3–5 years in a senior front-of-house role.
• Natural host—confident, warm, intuitive with genuine hospitality.
• Strong leadership and team-building skills.
• Financial acumen and a data-driven mindset—comfortable with budgets, margins and cost control.
• Excellent organisational and communication skills.
• Calm, confident presence under pressure.
• Passion for classic French cuisine and working knowledge of wine, beer and spirits.

Responsibilities

• Lead, inspire, and support the front-of-house team to deliver consistently excellent service.
• Engage with guests to build genuine relationships, resolve issues swiftly, and exceed expectations.
• Manage daily floor operations with a sharp eye for detail and efficiency.
• Deliver on financial goals by managing budgets, and controlling costs.
• Work with the sommelier and wine suppliers to maintain a best-in-class wine and drinks offering.
