Hiddenwell is preparing to open a 60-cover Mediterranean restaurant at Hoar Cross Hall in Staffordshire, seeking an experienced Restaurant Manager to lead from launch and build a premium dining experience. You will shape the brand, recruit and develop a high-performing team, establish service standards and drive Two AA Rosette aspirations while collaborating with the Head of Food & Beverage and Chef.

Qualifications

• Experience managing a premium or fine-dining restaurant.
• Ability to lead a pre-opening launch and ongoing operations.
• Strong commercial awareness and budgeting experience.
• Passion for Mediterranean cuisine and hospitality.
• Excellent people management and training skills.

Responsibilities

• Lead the pre-opening, launch and ongoing operation.
• Recruit, develop and motivate a high‑performing team.
• Set service standards in line with Two AA Rosette expectations.
• Manage rotas, budgets, labour, stock and beverage costs.
• Collaborate with Head of F&B and Chef on menus and guest feedback.
• Upsell and ensure outstanding guest experiences.
