Search Consultancy LTD is recruiting a Head Chef for a rosette-acclaimed hotel based in the Scottish Isles. You will share ownership of daily culinary operations, lead a skilled brigade, and work with the General Manager to deliver exceptional dining and service.

The role offers a salary of £46-49k plus tronc dividends and offers accommodation in a nearby cottage as part of the package. You will shape seasonal menus, manage costs, and uphold HACCP and food safety standards.

Qualifications

• Proven Senior Chef experience in a rosetted operation.
• Up to date with current cuisine trends.
• Experience leading multiple skilled chefs.
• Ability to lead, motivate and organise the brigade in a quality environment.
• Strong skills in menu creation, costing, stock control and waste management.
• Solid understanding of food safety, hygiene standards and HACCP.
• Positive, can-do attitude with clear communication and hands-on leadership.

Responsibilities

Job description

Assist in leading this rosette acclaimed, hotel-based kitchen delivering modern Scottish dishes using local produce across the menu. You'll take shared ownership of day-to-day culinary operations, standards and team leadership as Head Chef, working alongside a long standing General Manager, aiming for multiple accolades.

This Hotel Head Chef role is based in the Scottish Isles and comes with a starting salary of £46-49k plus tronc dividends and multiple non-monetary perks. Head Chef accommodation comes in the form of a nearby cottage as part of the package.

The Role itself

As Head Chef, part of the Hotel SMT, you will oversee all kitchen operations in this amazing property. The role exists to ensure consistent high-quality food and service for a highly reputable operation. You'll shape seasonal menus, work in a highly skilled brigade and maintain high standards across this highly accoladed hotel environment, managing, coaching and developing a team of junior chefs and kitchen porters within this brigade. As a team you will assist in controlling food costs, portions, stock levels and waste to agreed budgets while ensuring full compliance with food safety regulations and HACCP requirements.
