Hartnett Holder & Co, located within Lime Wood Hotel in Lyndhurst, Hampshire, seeks an experienced Pastry Chef to craft humble, simple, and proper desserts alongside renowned chefs Angela Hartnett and Luke Holder. You will join a 5-person pastry team in a vibrant, hospitality-driven kitchen.

In this role, you will deliver exceptional Italian-inspired desserts, maintain high standards, and contribute to a warm, welcoming atmosphere for guests and staff alike.

Responsibilities

• Run the pastry section and liaise with Sous and Head Chefs for a smooth service.
• Prepare high-quality ingredients and keep workspace clean and compliant.
• Follow recipes while contributing your own creative dessert ideas.
• Monitor pastry stock and ensure ingredients and equipment are available.
• Support growth and training of Apprentices and junior team members.
• Uphold health, safety, and food hygiene standards.

We are looking for an experienced Pastry Chef who loves creating humble, simple, and proper desserts to join our kitchen brigade at Hartnett Holder & Co, located within the award-winning, five-star Lime Wood Hotel. You will work directly alongside renowned chefs Angela Hartnett and Luke Holder to deliver exceptional, relaxed Italian dining in the heart of the New Forest National Park.

About the Role

Working within a dedicated pastry team of 5, you will play a vital role in using the freshest ingredients to prepare and execute our guests' favourite delicious desserts.

Your key responsibilities will include:

• Running the pastry section and liaising with the Sous and Head Chefs to ensure an efficient service.
• Preparing high-quality ingredients and maintaining clean, compliant workspaces.
• Following recipes while actively contributing your own creative ideas to new dessert menu offerings.
• Monitoring pastry stock and ensuring all required ingredients and equipment are readily available.
• Supporting the growth and training of Chef Apprentices and junior team members.
• Upholding strict health, safety, and food hygiene standards.
