The Peninsula London is seeking to hire a talented Operations Director for our Brooklands Operations, encompassing the Brooklands Restaurant, Bar, and Tasting Room. The Operations Director will demonstrate extensive experience in overseeing operations, ensuring the provision of quality food and beverage service as an industry leader, and maximizing turnover while maintaining high departmental revenue and profit margins.

Brooklands Restaurant offers contemporary European cuisine from Michelin-starred Chef Director Claude Bosi, widely regarded as one of Britain's leading culinary figures. The venue features top-flight libations and cigars in spaces inspired by British aviation and motorsport eras.

The venue, designed by London architects Archer Humphryes, includes a main dining room and an outdoor terrace with panoramic views of London’s skyline, iconic landmarks, and Royal Parks.

Key accountabilities

• Exceed guest expectations with service aligned with the Peninsula Service Principles, continuously seeking improvements.
• Manage productive levels in the Restaurant, Bar, and Tasting Room, while prudently managing utility and payroll costs within budget. Ensure revenue targets are met and analyze operational data for forecasting.
• Oversee daily operations to ensure the highest guest satisfaction.
• Provide successful and profitable leadership of the outlets.
• Develop sales strategies, promotions, activities, and budgets to support the hotel’s F&B marketing plan.
• Hire, develop, motivate, supervise, and performance-manage department staff, fostering a culture aligned with the mission, vision, values, and principles of the group.

General requirements

• Minimum 3 years of experience in a similar role within a luxury hotel environment with comparable standards.
• Strong organizational skills, detail-oriented, and guest-focused.
• Proven leadership in managing teams.
• Excellent time management, communication, and organizational skills; adaptable and positive.
• Fluent in English; proficiency in a second language is desirable.
