Job summary

The Landmark London Hotel is seeking a Night Chef to join our Kitchen Team on a permanent basis with an immediate start. You will work 40 hours per week on a shift rota and take ownership of mise-en-place, cooking to recipe standards, and supporting senior chefs to meet AA and Leading Hotels of the World criteria.

Qualifications

• Prepare mise-en-place and service for the section/department.
• Cook food to the recipe standards and adapt to menu changes.
• Support senior chefs to ensure that all food is cooked and presented to standards.

Responsibilities

• To work as an individual and as part of a team by taking ownership for the correct preparation of mise-en-place and service for the section / department.
• To prepare / cook food to the correct standard as specified in the recipe specification manual. Be aware of all menu changes and changes to dish specification.
• Understand the criteria set by AA and Leading Hotels of The World. Support senior chefs by ensuring that all food is cooked and presented to standards set in the outlet specification manual.
• Take full ownership for the kitchen for the duration of your shift, in the absence of the Senior Night Chef. Take appropriate action if problems arise, keeping the Night manager updated where appropriate
• Prepare a detailed written report for the Executive Chef / Sous chef following any incident or emergency situation, where possible, send via email with all Facts.To carry out all tasks as directed by your immediate supervisor/ manager and to assist in any other areas or duties within the kitchen/ hotel upon request
