Search Consultancy LTD is recruiting a Pastry Chef for a fine dining restaurant with luxury rooms in West Sussex. You will own the pastry offering, crafting desserts, viennoiserie and baked goods to accompany seasonal menus.

Qualifications

• Pastry chef with Michelin-starred, 3 Rosette or equivalent fine dining experience.
• Strong technical pastry background including laminated doughs and viennoiserie.
• Passion for seasonal ingredients, precision and presentation.

Responsibilities

• Produce high-quality baked goods and viennoiserie with laminated dough expertise.
• Develop creative, seasonal desserts that complement modern British menus.
• Maintain exceptional flavour, texture, presentation and consistency.
• Collaborate with Head Chef on menu development and new ideas.
• Own pastry preparation, mise en place and service.
• Manage pastry stock, ordering and wastage with cost control.
• Ensure excellent food hygiene and allergen awareness.
• Contribute to continual improvement of the pastry offering.
• Support the restaurant's expansion plans and reputation for exceptional food.
